It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is GHIRARDELLI RICE KRISPIES TREATS!

We all grew up with some variation of these sticky marshmallow cookie bar treats, either in their original (copyrighted) form or in any variation that has cropped up in recent years. The moment I discovered Ghirardelli chocolate, though, this became the ultimate adult treat for this grown-up kid. Whether you “frost” the bars with melted chocolate or stir in oodles of chopped chocolate pieces into the mix before pressing it into the pan, you’ve got a sinful dessert worth sinking your teeth into.

GHIRARDELLI RICE KRISPIES TREATS
[2 dozen]

1/4 cup butter
1 pkg. (10 oz.) small marshmallows
5 cups Rice Krispies cereal
1-2 pkg. Ghirardelli chocolate chunks or pieces

Melt margarine in saucepan over low heat. Add marshmallows and stir until melted. Cook over low heat 3 minutes longer, stirring constantly. Remove from heat. Add Rice Krispies and stir until coated. Using buttered spatula or waxed paper, press mix evenly into buttered 13 x 9 x 2-inch pan. Cut into squares when cool.

Note: To frost the bars with the chocolate, melt the chocolate pieces in a double boiler for easy spreading after the mixture is pressed into the buttered pan. If you want chunks of chocolate in the mix, add LAST/quickly after it’s cooled a bit so it doesn’t melt. Press everything in the pan. If you want to be truly decadent, add chunks into the mix, then add melted chocolate frosting on top. Let everything cool and “set” before cutting it into bars.

  2. My kids loved when I added stuff to rice krispies treats. Often M&Ms. I also substitute & use other types of cereal – in my house it was usually cheerios, and added a tablespoon of peanut butter to the marshmallow mix before the cereal. I had an elderly friend who said when the cereal boxes were low, she would dump them all together for the bars.
