Karen’s Killer Fixin’s #Cookies: FROSTED CINNAMON #BROWNIES from Karen’s Kitchen

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is FROSTED CINNAMON BROWNIES!

Who doesn’t love chocolate with a zip of cinnamon? This recipe is a nice twist on the traditional brownies. It’s full of sweetness, though, so you’ll want to moderate your servings…especially for the kidlets. No bouncing the little darlings off the walls, right? Well, unless you’re Grandma and sending them home shortly after filling their caffeine and sugar quota. Snort.

CINNAMON BROWNIES
[3 dozen]

Brownies:

3/4 cup baking cocoa
1/2 tsp. baking soda
2/3 cup butter, melted, divided
1/2 cup boiling water
2 cups sugar
2 eggs, beaten
1 tsp. vanilla
1-1/3 cups flour
1-1/2 to 2 tsp. ground cinnamon
1/4 tsp. salt
1 cup semisweet chocolate chips

Frosting:

6 T butter, softened
1/2 cup baking cocoa
2-2/3 cups powdered sugar
1 to 1-1/2 tsp. ground cinnamon
1/3 cup evaporated milk
1 tsp. vanilla

In mixing bowl, combine cocoa and baking soda, blend in 1/3 cup melted butter. Add boiling water, stirring until thickened. Stir in sugar, eggs, vanilla and remaining butter. Add flour, cinnamon and salt. Fold in chocolate chips. Pour into greased 13” x 9” x 2” baking pan. Bake at 350* for 40 minutes or until brownies test done. Cool.

For frosting, cream butter in mixing bowl. Combine cocoa, sugar and cinnamon; add alternately with milk. Beat to a spreading consistency; add vanilla. Add more milk if necessary. Spread over brownies.
