It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is EASY MEXICAN DIP!
Who doesn’t love to dip corn chips or Fritos into a good, hot Mexican dip? This is a great recipe for a party but, if you want to dress it up with some hamburger in a bigger baking dish and call it dinner, go for it. Just make sure you buy enough corn chips or Doritos (my family’s favorite) or Fritos or all three. Definitely not a diet friendly dish, but what a fun splurge.

EASY MEXICAN DIP
Using a 9 x 11-inch baking dish, spread one layer of room-softened cream cheese. Spread 1-2 cans of chili (without beans). Sprinkle can of chopped green chilis over all. Spread cheddar or Mexican cheese. Bake until cheese melts. Serve with corn chips or Fritos.
NOTE: You can opt to add chopped black olives and/or drained black beans or drained corn. Be sure there’s enough room for everything to melt together. Might demand a bigger baking dish to prevent overflowing. This is one of those dishes we’ve been known to turn into a family dinner, so bigger is better!
