Once upon a time, I close the book, yeah right. What kind of fairytale was my life? I just turned 26 and I have not been on a date in almost a year. I had dreamed of a Christmas wedding since I was a young girl. Maybe now is the time. The only thing I am missing is a man.
As I sip my coffee and look out the window of my New York apartment, I admire the trees and watch the people walking in Central Park. It was a beautiful summer day and in 6 months it would be Christmas.
Why is it that I am always the wedding planner and I haven’t been able to get my own wedding together? Well, that’s going to change today, I thought to myself as I flipped through a bridal magazine sitting on the table. My phone dinged on the table, indicating a text message, I swiped across the screen to open the message.
Cynthia: what time is your client this morning?
Me: why?
Cynthia: I wanted to see if you have time to go to lunch with me.
Me: my client is at 3, yes I can go to lunch, where do you wanna go?
Cynthia: How about Leos, I’m in the mood for some chicken salad
Me: Yeah Leo sounds great
Cynthia: 12 work?
Me: Yeah 12 is great, see you there.
I leaned back into the chair, still thinking about what I was going to do as I flip through the bridal magazine when an idea popped into my head. What if I just planned my own wedding and waited for my groom? What if I just plan the whole thing and get Abigail and Cynthia to help me? Yes, that’s what I’m going to do! I’m going to plan my own wedding and I’ll tell Cynthia about it today.

TACO BAKE
Ingredients:
1 lb ground beef
2/3 cup of water
1 8 ounce cream cheese
1 package taco seasoning mix
1 jar salsa
1 package jumbo shells
1 16 ounce bag of shredded cheese
1 bag of tortilla chips
Brown ground and drain. Cool jumbo pasta shells according to package, rinse and set aside. Return to pan add taco seasoning, water and cream cheese stir until cream cheese melts. Preheat oven to 350. Using a 13×9 cake pan fill each shell with the hamburger mixture and place into cake pan. Top each shell with a spoon of salsa and cheese. Bake in the oven for 15 minutes. Top with tortilla chips and shredded cheese. Bake for 5 minutes or until cheese melts.
Serve with guacamole, sour cream, lettuce and tomatoes or whatever other toppings you like on tacos.
