
It’s time for Karen’s Killer Fixin’s!
Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is PORK HOCKS with VEGETABLES from KAREN’S KITCHEN!!
I love the fall because I can break out all of my soup recipes. I love this one because it uses pork hocks, which occasionally goes on sale in the grocery store. I love this one, too, because it fits the fall for flavor with apple jelly. I know. That sounds weird, but it’s quite delicious. It’s not as “heavy” as a lot of soups.

PORK HOCKS with VEGETABLES
[From Karen’s Kitchen]
(Serves 6)
6 pork hocks
1-1/2 tsp. salt
2 large onions
2 celery tops
6 peppercorns
1 bay leaf
3 lg. potatoes, cut into bite-sized pieces
1/4 cup apple jelly
Wash hocks. In a kettle combine hocks, salt, onions, celery, peppercorns, and bay leaf with 1-1/2 quarts of water. Simmer 2-1/2 hours.
Pull out ham hocks and debone. Replace meat in kettle. **
Add potatoes . Cook, covered, 20-25 minute until potatoes are tender. Serve with hot bread.
**NOTE: You can prepare this in a crockpot on low 6 hours, or high for 4 hours up until the time you remove the meat and debone. Then, follow the recipe as outlined. It might take a bit more time to cook those potatoes through, depending on how small you cut them up.

I agree, Mica. There are not enough pork recipes. I hope you enjoy this one when you make it. When I shared it, I realized I don’t have any pork hocks in my freezer. I’m going to have to fix that. Too much cold weather coming up this winter. I hope you like it!
