Karen’s Killer Fixin’s: Spinach Dip for Veggies/Crackers

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is SPINACH DIP for VEGGIES/CRACKERS!

This is a great recipe for those summer parties and BBQs, although I’ve been known to make this for our neighborhood Christmas parties as well. It’s healthy (if you serve with veggies instead of crackers), easy to make, and delicious. I’ve even used leftover dip to stuff chicken breasts before wrapping the breasts with bacon and baking.

This recipe came from my mother. I remember smelling these savory little balls of heaven all day, every time there was a party or barbecue. The waiting was hard, I tell you! 🙂 It’s the perfect BYO food and so easy to make.

Karen’s Killer Fixin’s: Homemade Pesto

So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is HOMEMADE PESTO!!

Pesto can be made a lot of different ways and everyone has their favorite. This one is easy to make and flavorful.

HOMEMADE PESTO

4 cups fresh spinach
1 cup fresh parsley
¼ cup fresh basil
1 cup chopped green onions
1/3 cup walnuts
1 cup asiago, romano or parmesan cheese (fresh grated preferable)
1 tsp. salt & pepper
¼ cup olive oil
¼ cup balsamic vinegar (optional)
1 tsp. of lemon juice (optional)

Mix everything but the oil in a food processor.  Continue blending, slowly adding the oil.   Add ¼ cup balsamic vinegar and 1 tsp. of lemon juice for flavor if you really want (It’s not for everyone).

Chill overnight, serve on chicken or pasta. Recommend using fresh spinach or tomato/basil noodles but that’s optional.  Even fabulous as a dip with toasted bread!

So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is ARTICHOKE DIP ON BREAD CROUTONS!!

I don’t know how I grew up never tasting an artichoke.  Well, yes, I do.  I don’t think I even saw one in a grocery store until I was an adult and started shopping on my own and, even then, they were “exotic”…which translates to expensive. My husband introduced me to artichokes and I fell in love…for a second time. 🙂  When we lived in California near where most artichokes are grown, we couldn’t get enough of them. We’d go with the kids to a vegetable stand near our favorite beach and buy cases of “culls” — marred or otherwise difficult to sell — and eat artichokes for breakfast, lunch and dinner until they were all gone. Needless to say, I still can’t get enough artichokes even though we’re no longer in California. All of my favorite party dips include artichokes. I could make an entire meal out of this recipe!

ARTICHOKE DIP ON BREAD CROUTONS

1 can chopped artichoke hearts
1 cup Parmesan cheese
8 oz. cream cheese, room temperature
½ cup mayonnaise
¼ tsp. dill
1-2 cloves garlic (crushed)
Splash of Worcestershire Sauce
Splash of Tobasco Sauce
1 tsp. lemon juice (leave out if using marinated artichoke hearts)

**NOTE: I prefer using marinated artichoke hearts for the additional zip of flavor.

Mix by hand.  Bake at 400 degrees for 15 minutes. Serve with party sized bread croutons or toasted French bread wedges.

ASHLYNNE ~~First off, I’d like to thank Karen for hosting me again. I enjoy cooking and sharing recipes with others. After I tell you a bit about my latest release, Blood Bonds, I’m going to share a recipe from the Bisquick Cookbook for Sausage-Cheese Balls. This appetizer has been a holiday favorite and tradition in my family, and it’s super simple to make.

Ashlynne loves writing on the edge and teetering between the erotica and romance genres, and thinks of Ascher and Shauna as the wicked, damned version of Romeo and Juliet. Sausage-Cheese Balls (From the Bisquick Cookbook)
Makes about 8 ½ dozen

3 cups Original Bisquick
1 pound uncooked bulk pork sausage
4 cups shredded Cheddar cheese (16 oz)
1/2 cup grated Parmesan cheese
1/2 cup milk
½ teaspoon dried rosemary leaves
1 ½ teaspoons chopped fresh parsley or ½ teaspoon flakes

Heat oven to 350 degrees. Lightly grease a jellyroll pan. Stir all ingredients until they are mixed well, and you may have to use your hands. Shape mixture into 1 inch balls and place in pan. Bake 20 to 25 minutes or until brown. Immediately remove from pan and serve warm.
