BACON-ONION DRUMSTICKS
[Serves 4]
1/4 cup bacon bits
1/3 cup “fine” dry seasoned bread crumbs*
1-1/2 tsp. instant minced onion
8 chicken drumsticks, rinsed and patted dry
1-3/4 cup prepared ranch dressing
2 T. melted butter
Peheat oven to 400 degrees. Line baking sheet with foil and set aside. Reserve 2 tablespoons bacon bits. On waxed paper, combine bread crumbs and remaining bacon bits and onions. Brush drumsticks with 1/4 cup ranch dressing; coat with crumb mixture. Place on baking sheet. Drizzle with melted butter and bake 30 minutes. Turn carefully halfway through cooking time for even browning.
Place remaining ranch dressing in bowl. Sprinkle with reserved bacon bits. Serve as a dip for drumsticks. Place on serving platter. Garnish with parsley and tomato wedges, if desired.
*If your bread crumbs are too big, they can fall off during cooking. You don’t want too fine, like flour. But feel free to roll out larger bread crumbs a bit with a rolling pin.
Happy Eating!
