It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is GARLICKY STUFFED STEAK!
I love steak and I love garlic. These flavors mash up so well together. This steak recipe is something different and can be used for a special event when you want to really impress. The trick is to get the bottom round steak thick enough and have a steady hand when you’re slicing that pocket. Just take your time and have a sharp knife.

GARLICKY STUFFED STEAK

1 ¼ cups fresh bread crumbs, divided
6 T. minced fresh parsley, divided
½ tsp. salt, divided
½ tsp. pepper, divided
2 T. + 1 tsp. butter, divided
1 sm. red or green pepper, diced
3 cloves garlic, minced
2 ½ lb. bottom round steak, 2” thick
Preheat oven to 400 degrees. Combine 1 cup bread crumbs, 4 T. parsley, ¼ tsp. salt and ¼ tsp. pepper. In small skillet, melt 2 T. butter over low heat. Add red pepper and garlic. Cook, stirring occasionally, until pepper softens, about 8 minutes. Remove from heat; stir in bread crumb mixture. Cool to room temperature.
Place steak on work surface. With knife cut pocket in meat by slicing steak almost in half lengthwise. Open pocket; spoon in stuffing. Tie in several places with kitchen string.
In small skillet melt remaining butter over low heat; brush over steak. Combine remaining bread crumbs, parsley, salt and pepper. Roll steak in bread crumb mixture to coat; place on rack set in roasting pan. Cook 18-20 minutes per side for medium-rare.
