Karen’s Killer Fixin’s: Cereal Toffee

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is CEREAL TOFFEE!

This snack is a fun treat and quick to fix. The kids will love to help you make it!

CEREAL TOFFEE

1 cup sugar
1 cup butter
2-1/2 cup Kix cereal *

In large skillet, heat 1 cup sugar and 1 cup butter to boiling, stirring constantly.  Cook and stir over medium heat about 10 minutes, until mixture caramelizes (becomes light brown and thickened).  Remove from heat, fold in 2½ cups Kix cereal until evenly coated.  Spread mixture ¼” thick on ungreased baking sheet.  Cool.  Break into pieces.

* Note: Kix can be replaced with Cocoa Puffs for a chocolatey treat.

  2. This sounds really good. This chocoholic would really like it more using Coco Puffs. Of course my endocrinologist wouldn’t like me eating it. My numbers have been really good lately! I know if I made it to bring somewhere, I’d still eat it. Can’t win….☹️

    1. Mine wouldn’t love it either. But he has also said that once in a while won’t hurt me. It’s more about moderation with my food choices. But, I get it! Have a wonderful weekend yourself!
