It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is FLANK STEAK WITH DRESSING!
This one takes some cooking time but it’s so flavorful and delicious, it’s worth the effort. When I was looking through my cookbooks for this week’s “fancy”, I was surprised to find I haven’t shared this one before. I haven’t made it in a long time either. I’ll have to fix that just as soon as I get moved to my new home. I can already imagine the wonderful smells in my new kitchen this fall. Yummmmmm!

FLANK STEAK WITH DRESSING
[Serves 4]
Trim 2 lb. flank steak.
Pound in: 1 tsp. salt, 1/8 tsp. paprika, ¼ tsp. dry mustard, 1 tsp. Worcestershire Sauce.
Melt ¼ cup butter. Add and sauté 2 T. onions until brown.
Add 1 cup bread crumbs, ¼ tsp. salt, 2 T. parsley, 3 T. celery, a slightly beaten egg. Spread dressing over steak. Roll loosely and tie.
Heat in skillet 3 T. oil. Sear steak.
Preheat oven to 325 degrees. Place meat roll in casserole or covered dish.
Stir into oil in the skillet, 2 T. flour. Add 1 cup water or stock, 1 cup tomato juice, and ¼ tsp. salt. Pour over steak. Bake 1-1/2 to 2 hours. Add seasoning if required.
NOTE: My family is partial to mashed potatoes, so I tend to double up on the stock/tomato juice/salt so there’s plenty of savory gravy.

Not for another month…probably. I think most of my kitchen stuff is either in the garage in Colorado or in the storage unit. I can’t cook this in the RV. Well, with this heat and humidity, I won’t. LOL Soon as I can, though!

It really is a good recipe. I’m going to be living in the RV for about another month while the men go back and forth with “stuff”. Have no furniture for my house so I’ll wait until hubby and I can actually buy a bed and such. Enjoying the property though.
