It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is CHICKEN ARTICHOKE DIP !
I love taking hot dips to parties. They disappear quickly, especially matched to the right crackers or chips. They’re easy to make and sure to impress. This is one of the delicious variations that are always welcome to BYO parties. You’ll have to make a batch for the family because the party batch will be all gone!

CHICKEN ARTICHOKE DIP
1 [13 oz.] can drained chicken breast
1 can [13.75 oz.] artichoke hearts, drained & cut into pieces
1 [10 oz.] box frozen spinach, thawed & drained
2 [14.5 oz.] cans Italian Seasoned Tomatoes, drained & diced
1 T. lemon juice
1 pkg. [8 oz.] cream cheese
1 cup Parmesan cheese, shredded
Garnish
In medium casserole dish, layer half of the artichoke hearts, spinach, chicken, and tomatoes. Then sprinkle half of the lemon juice on top.
Cut cream cheese into thin chunks and spread half of it over other ingredients. Layer the other half of the ingredients as described above.
Spread rest of the cream cheese on top and sprinkle with Parmesan cheese evenly over everything. Garnish with green onion, green pepper, chives, or tomatoes.
Bake uncovered at 350 degrees for 45 minutes. Serve as a main dish or with chips or crackers.

Yes, it’s a basic recipe. So spice away! For my family (not so much parties, since tastes can be different), I’ve been known to hit the garlic hot and heavy. My spice cabinet is often open for something new and delicious, too. It’s one of those versatile recipes.
Could double as a meal…😉
Definitely done that a time or two. Toast points works great for that. Or, if you prefer a more calorie-efficient meal, large chunks of veggies for dipping.
