It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is YUMMY INSTAPOT RICE PUDDING!
My husband loves rice pudding. I’ve tried a couple of times to make it, with mixed results. Recently though, I created my own variation from several recipes I found online. Even better, I made it in my InstaPot. It was a lot easier than I expected and came out fabulous. My husband loved it. He told me I could make it again. Win-win!

YUMMY InstaPot RICE PUDDING
Makes 8 servings

Ingredients:
1 cup Arborio rice
1-1/2 cups water
¼ tsp. salt
2 cups whole milk, divided
1 can sweetened condensed milk (not evaporated milk)
2 eggs
½ tsp. vanilla extract
1 tsp. cinnamon
¼ tsp. nutmeg
¾ cups raisins
Instructions:
In InstaPot, combine rice, water and salt. Lock lid into place and select High Pressure and 3 minutes cook time. When beep sounds, turn off InstPot and use natural pressure release for 10 minutes. After 10 minutes, release remaining pressure with quick pressure release.
Add 1-1/2 cups milk and 1 can sweetened condensed milk. Stir.
In mixing bowl, whisk eggs with remaining ½ cup milk, vanilla, cinnamon & nutmeg. Pour into InstaPot. Select Saute setting and cook, stirring constantly, until mixture begins to boil. Turn off Instapot. Remove pot from pressure cooker. Stir in raisins.
Pudding will thicken as it cools, absorbing the liquid. Serve warm or chill until ready to serve. If too thick, stir in additional milk or cream.
Note: I didn’t have enough whole milk so I used 1 cup milk and 1 cup of ½ & ½.
Additional Note: My husband informed me that it wasn’t complete until it was drizzled with maple syrup. It was a great addition!

I imagine any syrup would fit the bill. You don’t need much. It’s pretty sweet all on its own! LOL

I remember eating a sweet version of rice with raisins back in my really young years – wonder if that’s similar. Hmmm….. Might be interesting to try when the house is filled with more people to eat. <3

This sounds SO yummy! Have you ever tried a vegan version? Maybe with coconut milk? My daughter and her partner are “mostly vegan” but they both love rice pudding.
We aren’t rice pudding people, but this recipe sounds easy and good.
If you ever need something for a party, it might be a nice treat for someone.

I LOVE my InstaPot! I’ve found the best recipe for Carnitas that my husband always raves over. I do like the ability to pull dinner together more quickly, especially the foods that need to be tender. I’ll be tucking my InstaPot in the RV on trips.
