It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is SOPAPILLAS!
I haven’t made these in ages. I used to make them for my family when the kids were still at home. But these are a marvelous, easy treat once in a while. Hot. Tender. Tasty. Drizzled with honey, they’re sticky goodness!

SOPAPILLAS (Fried Bread)
4 cups flour
3 tsp. baking powder
3 T. shortening
1 tsp. salt
2 tsp. sugar
Sift flour, baking powder, salt and sugar. Cut in shortening with pastry cutter or two forks. Add enough water to make dry dough (about 1-3/4 cup). Let stand 20 minutes. Roll ¼” thick. Cut into 3” squares and deep fry. Serve with honey.

Wow – I never realized how easy the dough would be…. cool! Now if I can get my 20 year self back who can eat all of the carbs… HA! I will have to remember for the crew.
