It’s time for Karen’s Killer Fixin’s!

Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is CREOLE SEASONING from KAREN’S KITCHEN!!

I realized today that I have been remiss in not sharing some of the seasoning recipes I’ve collected over the years. I’m a huge SPICE girl, and have a large array of spices that take up a lot of room in my small kitchen. They aren’t something I’ll stint on.  I’ve  even learned to make some of my favorite seasonings, because, let’s face it, the cost of even the smallest bottle of seasoning has gotten crazy. When I make my own, I also know what I’m putting on my food.

CREOLE SEAFOOD SEASONING
[Makes 1/2 cup]
[From Karen’s Kitchen]

2 tsp. salt
1 T. garlic powder or flakes
1 T. pepper
1-1/2 tsp. dried thyme, crumbled
2 T. paprika
1 T onion powder or flakes
1-1/2 tsp. cayenne pepper
1-1/2 tsp. oregano, crumbled

Combine all of the ingredients in a small bowl. Store in an airtight container. Good on fish and seafood, poultry, and pork.

NOTE: If you use the larger flakes and crumbles, take a moment to crush the seasoning before use to release more flavor.

ANOTHER NOTE: You might as well make a double batch while you’re at it. It’s so good. Just make sure to seal the container well for storage.
