It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is MARINATED GRILLED PORK!!
Who doesn’t love grilling during the summer? Taking that heat outside, instead of turning on the oven is always a good idea. And with this current heatwave, a quickly grilled meal that’s satisfying is even better. We don’t want to be out in the heat any longer than necessary either. This recipe fits the bill in so many ways. It’s savory, quick to make, and delicious. Toss together a salad and dinner is on the table in no time!

MARINATED GRILLED PORK
[Serves 4]
4 center-cut boneless pork chops
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup barbecue sauce
2 T. pineapple juice
2 T. soy sauce
1 T. olive oil
1 T. butter
1 T. chopped fresh parsley
Place chops between 2 sheets of waxed paper. With meat mallet or rolling pin, flatten chops slightly. Season both sides with salt and pepper.
Whisk together barbecue sauce, pineapple juice, soy sauce, and oil in 9″ glass pie plate. Add meat, turning to coat. Cover with plastic; refrigerate 1 hour. turning after 1/2 hour.
Prepare outdoor grill.
Remove chops from marinade. Transfer marinade to small saucepan., boil 1 minute. Remove from heat; swirl in butter until just incorporated, but not fully melted. Reserve for sauce.
Grill (or broil) chops for 8 minutes, turning over once. Transfer meat to platter. Spoon sauce over chops. Sprinkle with parsley. Serve immediately.
* Chops can be broiled if grill is unavailable.

That sounds fantastic. Wish I barbecued more often, but it’s quite a hassle to just do so for myself. I will keep this recipe in mind.
