It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is SAUCY PORK CHOPS!

This is one of those easy pork chop recipes that pulls together quickly. It’s savory and, with some potatoes and a vegetable, makes a satisfying meal for the entire family. With the ingredients many of us have in our pantries, it is a last minute “what shall I do with the chops” meal that isn’t simply fried in a pan.

SAUCY PORK CHOPS
[Serves 6]

6 pork chops
1 medium onion (sliced)
1 10-oz. can cream of chicken *
1/4 cup catsup
2-3 T. Worcestershire sauce

In skillet, brown chops in hot fat or oil (I always use olive oil in my cooking). Season with salt and pepper to taste. Top chops with onion slices. Combine remaining ingredients. Pour over chops. Cover, simmer 45-60 minutes. Remove chops to platter. Spoon sauce over chops and serve.

* For different flavors change out the cream of chicken for any of the other creamed soups, like celery or mushroom.

NOTE: The sauce shouldn’t cook away but, if necessary, add just enough water to keep the gravy smooth.
