It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is GNOCCHI!
The first time I saw how easy it is to make Gnocchi, I was shocked. These small, soft pillows look like pasta, but they’re really dumplings that can serve as an alternative to some of your favorite pasta dishes. You can even make them ahead of time and freeze them for those last minute meals.

GNOCCHI from Karen’s Kitchen
4 good-sized potatoes
4-5 eggs
Flour
Cook the potatoes with skins on until tender. Peel and mash dry. Add eggs, one at a time. Four to make soft dough. Roll out and cut into pieces. Flour each piece. Freeze or cook immediately like spaghetti. Toss with spaghetti sauce, olive oil & garlic, pesto, or Alfredo sauce.
