
It’s time for Karen’s Killer Fixin’s!
Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is MANHATTAN BAKED BEANS from Karen’s Kitchen!!
I’ll be honest. I haven’t made this recipe in forever. Not sure why. Probably just got too buried in my recipe books. It’s not a “quick” recipe either. However, what it is is delicious! There’s nothing better than a homemade, long-cooking baked bean recipe. This one is worth the trouble. Now that I’ve uncovered it, I’ll have to make it. Soon.

MANHATTAN BAKED BEANS
(Recipe From Karen’s Kitchen)
1 lb. dried beans (2 cups)
1/2 lb. slab bacon
1 cup chopped onion
1-1/2 cups brown sugar
1 cup catsup
1 tsp. dry mustard
2 tsp. salt
2 T. Worcestershire Sauce
1 cup boiling water
Cover beans with water (not the boiling water). Bring to a boil. Reduce the heat, simmer, covered for one hour.
Make sauce:
Trim the rind from the bacon and cut it into 1/2-inch pieces. In a skillet, sauté the bacon pieces until done. Remove it from the skillet.
In hot drippings, sauté onions.
Preheat oven to 350 degrees.
Add brown sugar, catsup, mustard, salt, Worcestershire Sauce, and boiling water. Bring to a boil. Stir until sugar dissolves.
Drain the beans, then turn them into a 2-1/2-quart casserole. Pour the sauce over the beans. Stir in bacon pieces.
Bake, covered, for 3 hours. Uncover during the last hour.
