Note from Kia: Token Huntress is a vampire romance dystopian and the main character, Esmore is a huntress. In a modern setting she would be very focused on nutritional value and I could rarely imagine her splashing out and consuming anything that didn’t benefit a fit mind and body. Perhaps her familiar, Chase would be able to convince her to try a piece of chocolate but I’d imagine she’d spit it right back out at its tarty taste. So, a salmon and vegetables meal would be a perfect dinner. Not too riddled in carbs but a clean protein source. My gosh, listen to how I sound while I’m writing this. She very much only wants the good health stuff and I doubt her culinary tastebuds would be very adventurous. Haha

Sesame Salmon, Purple Sprouting Broccoli & Sweet Potato Mash [Attribution: https://www.bbcgoodfood.com]

Ingredients

Method

  • STEP 1

Heat oven to 200C/180 fan/ gas 6 and line a baking tray with parchment. Mix together 1/2 tbsp sesame oil, the soy, ginger, garlic and honey. Put the sweet potato wedges, skin and all, into a glass bowl with the lime wedges. Cover with cling film and microwave on high for 12-14 mins until completely soft.

  • STEP 2

Meanwhile, spread the broccoli and salmon out on the baking tray. Spoon over the marinade and season. Roast in the oven for 10-12 mins, then sprinkle over the sesame seeds.

  • STEP 3

Remove the lime wedges and roughly mash the sweet potato using a fork. Mix in the remaining sesame oil, the chilli and some seasoning. Divide between plates, along with the salmon and broccoli.

  1. Good morning, Kia, and welcome to Karen’s Killer Fixin’s. What a fascinating premise. I’m intrigued into going back to the beginning of the series to find out how this character got started. What’s a “token” huntress? Thanks for sharing your story with us today. Thanks, too, for sharing your recipe. Sounds healthy, which is how I’m trying to eat these days. I love broccoli and sweet potatoes and salmon so this will be something I’ll try.

  2. Interesting recipe. I’m not sure I am ready to try purple broccoli, lol. I’m growing black corn because someone gave me the seeds as a gift…we’ll see if it tastes any different, but I wonder it it will be more for decoration than as a side dish!
