Karen’s Killer Fixin’s: Fudge Truffle Cheesecake

  It’s time for Karen’s Killer Fixin’s!

Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me.  I simply love to cook and want to share that love with my readers.

So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is a *Double Feature*  FUDGE TRUFFLE CHEESECAKE in CHOCOLATE CRUMB CRUST!!

It’s no big news to anyone who knows me that I can pass up cake and pies…for the most part. 🙂 But, stick a cheesecake under my nose and I’m in Nirvana. I haven’t met a cheesecake I didn’t like.  Add fudge and truffle in the title and I’m so there!! This cheesecake is rich and decadent and…okay, I am a writer and there aren’t enough words. You have to taste it and just experience the magic!

FUDGE TRUFFLE CHEESECAKE
[9-inch cheesecake]

 

Chocolate Crumb Crust   (recipe below)

2 cups (12 oz.) semi-sweet chocolate chips

3 pkgs. (8 oz. each) cream cheese, softened

1 can sweetened condensed milk (NOT evaporated milk)

4 eggs

2 tsp. vanilla

Heat oven to 300 degrees.  Prepare Chocolate Crumb Crust; set aside.  In heavy saucepan, over very low heat, melt chips, stirring constantly.  In large mixer bowl, beat cheese until fluffy.  Gradually beat in sweetened condensed milk until smooth.  Add melted chocolate chips and remaining ingredients; mix well.  Pour into prepared pan.  Bake 1 hour and 5 minutes or until center is set.  Cool; chill.  Refrigerate leftovers.

CHOCOLATE CRUMB CRUST
[For Fudge Truffle Cheesecake]

In medium bowl, combine 1 ½ cups vanilla wafer crumbs, ½ cup powdered sugar, 1/3 cup cocoa and 1/3 cup melted butter or margarine.  Press firmly on bottom of 9-inch springform pan.

There are some absolutes in this life that are irrefutable. If you leave the house looking like crap, you’ll see someone you know, usually an ex-boyfriend. If you’re running late for an appointment, you’ll hit every red light on the way. And a three a.m. phone call is never good news. Either someone’s dead, in the hospital, or you’re a drunken booty call. But that Saturday morning, I discovered another reason to avoid the ringing harbinger of bad news.

“’ello,” I answered, my eyes still closed.

“Rose, I’m in jail, girl.”

I sniffed and sat up on my futon. “Janelle?”

“Of course it’s Janelle. They think I tried to kill Asshat.”

Scrubbing a hand over my eyes, I glanced at the clock. “Asshat?”

Janelle lowered her voice. “Rose, wake up and listen. I’m in jail, Asshat’s in a coma, and they’re saying I tried to kill him. I need help.”

Her dilemma finally penetrated my sleep-fogged brain. “Oh my God. Where are the kids?” Janelle had two, Damon, nine, and Sherise, seven. Both so cute you wanted to pinch their little cheeks. But I wouldn’t recommend it—that Sherise was a biter.

“They’re staying with my cousin, Sondra. But I got to get out of here. If they think I’m spending Christmas in jail then I’m Halle Damn Berry.”

“What do you want me to do?”

“Call that fancy lawyer you know. He’ll figure it out.”

Dane Harker. “I’ll call him and come see you in the morning. Will they let me bring you anything?”

“Cigarettes and toiletries. These bitches trade everything for cigarettes. And Rose? Thanks.”

A Note from Terri: Fall is my favorite time of year. I love the changing leaves, the hint of wood smoke in the air, and pumpkins. I make this delicious bread whenever my kids are home from college. The spicy pumpkin smell fills the house and makes me happy. I’ve adapted this recipe from Gifts of Good Taste published by Leisure Arts in 1989.

PUMPKIN BREAD
[Makes 2 loaves]

3 ½ cups all-purpose flour (I use whole wheat pastry flour and it works beautifully)
2 tsp. baking soda
1 tsp. salt
2 tsp. pumpkin pie spice
1 ½ cups sugar
1 ½ cups brown sugar
½ cup vegetable oil
¾ cup sour cream
4 eggs, lightly beaten
2 cups pumpkin
2/3 cup water
1 ½ cups chopped pecans

Preheat oven to 350 degrees. In large mixing bowl, combine flour, baking soda, salt, spices, and sugars. Add oil, sour cream, eggs, pumpkin, and water. Combine until well blended. Stir in pecans. Lightly grease two 9x5x3 inch loaf pans. Pour batter into pans and bake 1 hour or until toothpick inserted into the middle of the loaf comes out clean. Remove from oven and cool before removing from pans. Enjoy!

            It’s Thursday ~ 11/22/12 ~ and…

The ’57 Fairlane in my holiday, CATCH THAT SANTA, novelette that was supposed to make a debut appearance this morning somehow got lost on the publication highway.  Don’t you just hate when that happens?

No worries, though.  It’s just a minor malfunction.  With any luck, she’ll be pulling up to the curb tomorrow, Saturday latest.  Keep an eye out because I’m planning a blowout Black Friday weekend FREE sale so you can drive this baby right into your Christmas stocking.

In the meantime, let me officially run out the details on CATCH THAT SANTA!

“What do you mean, Grams ran off with Santa Claus?” Sara Marks stared at the first floor orderly, Buddy Cantor, who’d met her outside her grandmother’s room at Happy Acres Residence.  She could barely catch her breath after dashing through the facility carrying her sleeping seven-month-old.  It had taken her a full thirty minutes to drive from the church near her apartment across Denver’s snow packed streets in her crotchety, old Ford, when it should have taken ten.  Twenty minutes too long if her grandmother was truly missing.

She should never have gone to the Christmas Eve service.  She’d suspected Grams was up to something when she called and told her to come later so she could take a nap before their usual dinner together.  There was something in her voice, but Sara hadn’t paid enough attention with little Lanie fussing in her ear.  “Next thing you’ll tell me is Santa took her to the North Pole in a sleigh pulled by reindeer.”

“No.  A gold ’57 Ford Fairlane convertible.” The man shuffled uneasily in the doorway.  “And they’re headed to Vegas.  We think.”

“Vegas.” Movement in her arms made her aware Lanie was fully awake and ready to play.  She grinned up at Sara with two shiny new bottom teeth, like she’d woken up just to laugh at her great-grandma’s latest flight of fancy.

Oh, Grams, what have you done?

Sara frowned at the orderly.  “This is insane,” she said.  “She has to be here. You searched the building? She loves the arboretum.”

Buddy nodded.  “We’ve canvassed the entire building, mast to deck. Stem to stern.” The orderly fancied himself a sailor, although Sara couldn’t see how buying a bass boat gave him the chops to litter sailing terms through every conversation she’d ever had with the man.

“Could she be hiding for some reason?” There was never an inkling Grams was unhappy at Happy Acres.  Or that her faculties were failing.  The woman might be pushing eighty but she was still sharp as a tack.  It was her mobility that forced Sara to accept her grandmother’s insistence she move to this facility.

Happy Acres was a large complex with suites on the west side for more independent residents, while those who needed assistance lived in the east wing.  Grams had moved herself into the east wing after her fall four months ago, claiming it was time she move out of Sara’s tiny apartment anyway and make room for her first great-granddaughter. Sara argued until she was blue in the face but her independent Grams had already signed the papers and paid the upfront, non-refundable fees. It was a done deal by the time Grams asked Sara to help her pack.

A knot of apprehension grew in her chest, right above where little Lanie was elbowing her sternum.  Sara smothered her growing panic and laid the baby on the bed to remove her new hat and coat.  “Okay, so Grams isn’t here.”  She picked up Lanie and refocused her attention on the orderly.  “When did she leave with this Santa Claus? Did she know him?

“Of course, she had to know him, or she wouldn’t have left with him!”  She frowned.  “Why do you think they’re heading for Vegas?”

He reached into his pocket and handed her a folded piece of paper.  “Your grandmother left this note on her bed.”

Sara unfolded the paper.  Sara, baby, don’t fret. Santa’s finally come, as I told you he would. Getting married in Vegas. Your Christmas present is under the bed. Don’t wait till tomorrow to open it. You’ll need it.  Love, Grams.

There was a postscript. P.S. Didn’t have time to water my begonias. Please take care of that for me before you come? Can’t wait to see you!

Grams’ hold on reality was becoming dicey in Sara’s mind. “I don’t understand.”  She glanced around the small room at the begonias Grams babied like children – fifteen begonias to be exact, scattered on bookshelves, an antique dresser and armoire, on the floor near the sliding glass doors that led to her private patio – as if the hand-painted pots also held the answer that would end her confusion.  “How long has she been gone?” she asked.

Buddy shrugged.  “We’re not sure.  Last time anyone saw her was at the Christmas party before dinner.  Santa was here handing out presents to all of the residents.”  He reddened.  “She sat on his lap and whispered something into his ear, they disappeared soon after that.  No one knows when they left the building.  We weren’t even sure she’d gone off with him until we found the note a few minutes ago.”

“Did you check under the bed yet?  The note says there’s a package.  There has to be more, some reason, something to tell us what she’s doing.  Maybe it’s in there.”  Not daring to leave Lanie on the bed unattended she handed her to her favorite raspberry-blowing buddy, put a hand on the edge of the bed, and began to drop to her knees on the floor.

“Oh, no,” the orderly said, trying to hand Lanie back. “Let me do that!  You’re going to get your pretty Christmas outfit dirty.”

“I’m already down here,” she said, pushing his legs out the way so there was room for her to stick her head under the bed’s dust ruffle.

There! Just out of reach toward the wall at the top of the queen-sized bed. A large, rectangular box wrapped up in colorful images of Santa Claus and Ho-ho-ho greetings.  A muffled chortle from behind her told her Lanie was occupied by Buddy for the moment, so she tried to snag a piece of wrapping paper to pull the box toward her.

“Umph.”  She shuffled a few inches on her knees, her fanny sticking up in the air.  Undignified, but she’d worn her wool pants and heavy silk sweater to church and there was no one to see besides Buddy.

She could almost…reach…it.

A Note From Cathy: Are you deep into NaNo, looking for a simple meal (time saver with the holidays right around the corner) or a hearty winter soup? Smokey Winter Squash Soup gives you all the above – and flexibility depending on what’s in your cupboard. My kids love this soup (a way to get vegetables into them!) and I love being able to toss everything into the cooker in the morning and know dinner’s taken care of for the day.

SMOKEY SPICE WINTER SQUASH SOUP
[Makes 8 generous servings]

1 medium sized winter squash (~2 – 3 pounds)
4 cups chicken stock
Red pepper – use 3 – 5 if using prepared roasted ones or 1 large fresh one
Garlic – 4 cloves minced or 3 Tbs prepared
1 large onion
¼ tsp ginger, minced (or ½ tsp ground)
½ cup peanut butter
1 can garbanzo beans (or substitute Great Northern or any white bean you prefer)
¼ tsp Chipotle pepper (this is where the ‘smokey’ comes from; substitute red pepper if you prefer)
Pinch cardamom (substitute ¼ tsp cloves or nutmeg)
¼ – ½ tsp mustard (I’ve actually substituted Dijon mustard here)
½ tsp cumin

Chop up the winter squash and either roast for 20 minutes or microwave 5 minutes. Allow to cool, then peel and place in soup pot or slow cooker

Add chicken stock and remaining ingredients. Cook low and slow until everything is tender. I set me slow cooker for 4 hours and check to see if the squash is tender. Add time as needed – don’t worry about overcooking, it just gets better the longer the soup ingredients have to mingle. Taste and add seasonings if desired.

Blend until smooth. (I use an immersion blender but a hand mixer or the old standby blender work as well)

Serve with crusty bread and a green salad.   8 generous servings

Karen’s Diary Drop-In ~ 11-15-12 ~ Never Say Never!

Dear Diary,

            It’s Thursday ~ 11/15/12 ~ and…

Never say never!

You would think a woman my age – no, wait, make that a woman with my vast experience (never mind, forget my age 🙂 )– would know this by now.  Occasionally, though, I find myself recanting a vow I mistakenly uttered at one time or another that included the word never in it.

Case in point?  I remember once saying that I would never write a short story or a novella or anything under 50,000 words. Why? It wasn’t that I had any weird notions that smaller stories were beneath me or anything.  I could simply never – hmmm, there’s that word again – envision having the ability to write anything with a lesser wordcount.

After all, I’m a looooooooooong writer. It’s nothing for me to write 20 page chapters I then have to cut down to size or, more likely, separate into two chapters.  I think in terms of single title word counts above 85,000, at least with my romantic suspense.  I can’t even keep these diary entries down to a reasonable size, despite my best intentions.

Which brings us back to never say never.  I recently got a wild hair to try a Christmas story.

Yeah, I know I haven’t finished KILLING SECRETS but I felt a need for a pause to write something cute. Maybe it was because I’m not comfortable with what my villain is doing right now.  It’s tough to get into the holiday spirit when you’ve got a serial killer running through your head. Nothing like Santa Claus and a romantic comedy to slow a killer down!

It doesn’t help knowing I’m going to be really pushing to finish KILLING SECRETS by the end of the year. Remember that single title word count?  Throw a whole lot of medical things (more about that in a minute) on top and, well, something had to give.

I don’t regret my decision to write the story that popped into my head, made me smile. Giving myself a break this past week, starting CATCH THAT SANTA! was a marvelous idea.  I’m feeling mentally refreshed and creative, and it’s a heartwarming Christmas story I think you, my readers, will enjoy this holiday season.

I still have some work to do over the next few days, but CATCH THAT SANTA! will debut exclusively on Kindle on Thanksgiving Day.  That’s just one week from today.  Yippee!

Next Tuesday on my Novel Gems blog, I’ll share a teaser from this fun novelette, as well as the fabulous cover created by the same talented friend who created my new SATIN PLEASURES cover.  On Thursday’s Karen’s Diary Drop-In, I’m having a launch party. I’m still going to do my best to release this book by the end of the year.  I will admit to some concern though about whether that’s realistic. As some of you follow me on Facebook and Twitter, you already know I’ve been hit with an unexpected twist in my knee replacement saga. Went to see an orthopedic surgeon last week and he’s scheduled me for my first surgery on December 5th, to be followed within six weeks (thereabouts) for the second knee.

I didn’t figure this distraction into my deadline. Nor did I expect several other procedures to crop up, and I don’t know how my recuperation will impact my day-to-day writing life once the surgery is done. Needless to say, I’m distracted and unfocused and out of the office a lot.  Still, I’m determined to keep plugging and do my very best to write every day. With luck, and a productive muse, I might still make it.

Cross your fingers.  If anyone wants to give me something for Christmas, make it a few extra hours in each day. You don’t even have to wrap them!

Karen’s Killer Fixin’s: Pork Roast with Garlic & Herbs

  It’s time for Karen’s Killer Fixin’s!

There’s nothing more satisfying than a pork roast dinner in the fall and winter months. Pork and garlic are so delicious together.  Add rosemary and thyme, and you’ve got yourself a savory mouthful.  🙂  Try this recipe and see if you don’t agree.

PORK ROAST WITH GARLIC & HERBS
[Serves 7]

1 ¾ lb. lean, boneless pork loin roast
1 tsp. whole thyme
1 tsp. pepper
6 cloves garlic, minced
½ tsp. salt
1 tsp. crushed whole rosemary

cooking spray

Trim fat from roast.  Combine garlic, rosemary, thyme, pepper and salt in small bowl. Mash into paste.  Rub garlic paste over surface of roast.  Tie roast securely with string, 2-3” intervals.  Place on a rack coated with spray and place rack in shallow roasting pan.  Insert meat thermometer into thickest portion.  Bake at 400 degrees for 1 hour or until thermometer registers 160 degrees.  Let stand 10 minutes.  Remove string and cut into thin slices.

Dear Diary,

I had always wanted to write novels, since I was a kid, but it took a period of long confinement to bring about that dream.

Suddenly a chemical shot through Lucius while he was watching that sexy female, similar to a feeling when he was mortal and checking out a hot babe. But this desire in his vampire state was more intense, almost electrified and mingled with this lustful craving for blood. He had to drink from her neck; taste her life’s essence, and he had to get laid. There was no fighting it, no self-control. He was accustomed to indulging every desire, no matter if they were spontaneous eruptions from some surging chemical, or a well-planned rendezvous.

PUMPKIN PANCAKES WITH CARMELIZED BANANAS & CINNAMON WHIPPED CREAM

Here’s a wonderful Autumn recipe for everyone!  How about some pumpkin pancakes with caramelized bananas with cinnamon whipped cream to go with your cup of java? Does that sound scrumptious or what!

Pumpkin Pancakes:

  • 1 cup pastry flour
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/16 teaspoon cloves
  • 1/16 teaspoon nutmeg
  • 1/16 teaspoon allspice
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup pumpkin puree
  • 2 eggs
  • 1 cup half-and-half
  • 1-ounce melted butter
  • 4 egg whites, whipped to soft peak
  • 2 tablespoon vegetable oil

Caramelized Bananas:

  • 4 bananas, cut in half lengthwise
  • 2 ounces butter
  • 4 tablespoons sugar

Cinnamon Whipped Cream:

  • 4 ounces whipped cream
  • Cinnamon
  • 1 tablespoon sugar

To make pancakes, sift together all of the dry ingredients. In a bowl, combine the puree, whole eggs, and the half-and-half. Add the flour mixture and stir, being careful not to over mix the batter. Finish with the melted butter. Gently fold in 1/2 the egg whites to loosen the batter and when the whites are nearly incorporated, fold in the remaining egg whites.

Heat the griddle to medium heat. Drizzle enough vegetable oil to prevent sticking and spoon batter onto griddle, spreading them with the back of the spoon. When pancakes are golden brown, flip to finish cooking.

Cut the bananas in 1/2 lengthwise. Heat a saute pan to medium and melt the butter and sugar. Stir until sugar dissolves and begins to caramelize. Add the bananas and toss to coat.

To prepare the whipped cream, whisk the cream, cinnamon, and sugar in a bowl until it holds a stiff peak.

To serve, stack the pancakes on each plate. Spoon syrup over the pancakes, top with the caramelized bananas and a dollop of cinnamon whipped cream.

Dear Diary,

            It’s Thursday ~ 10/25/12 ~ and…

I’ve dumped a Trick or Treat bag full of goodies I want to share all over my dining room table.

“Wait,” you say.  “We’re too old for this nonsense.”

I say, “Who made it a rule only kidlets got to go trick or treating last night?” 🙂

So, before you put away your favorite scary costumes and wash off  your glittery, fairy princess makeup, let’s see what’s in the neighborhood for readers and writers. Warning: Be sure to hold onto your flashlights in case the lights go out, and please don’t get grabbie. Manners, please!  There are enough treats here for everybody.

Fill your bag with treats, but watch out for the tricksters!

TRICK  OR TREAT FOR WRITERS

  Muse dances your story down the wrong path into a dark, scary forest you can’t escape.

  Hero finally realizes it’s not indigestion burning in his chest, but love for his heroine.

  Heroine hides in the pumpkin patch and refuses to come out and play.

  The villain in the scary story you’re reading is so real, he slinks out of the shadows behind the fainting couch and grabs you by the throat.

  You get to the end of the tome only to discover the story sailed off without you and you have no choice but to buy a berth on the next ship to finish your journey.

  The local tomestore has a 50% off sale on all of the tomes you want to buy.

  Editorial Gremlins drive you crazy littering the tome you’re reading with typos and grammatical mistakes designed to drag you down into a viscous bog.

  You not only meet the model who posed for that sizzling tome cover you love so much but you get your own clinch picture taken with him, sans shirt.
