THE ALCREST GASTROPUB SIGNATURE HONEY-LIME VINAIGRETTE
[From Canadian Author & Real Chef, Lorne Oliver]

This is the vinaigrette Spencer learned when he was in culinary school and he fell in love with it.  He has kept it with him and adopted it as the signature vinaigrette for the restaurant.  It’s simple, easy, and tasty. 

3   limes, zested and juiced
1 tbsp honey
1 tbsp Dijon mustard
Canola oil
Salt and pepper

Method

1. Put the lime juice and zest, honey, and mustard into a large bowl.  Place the bowl onto a towel so that it won’t move.  Using a whisk, slowly whisk in some oil.  Just a little at first, maybe a tablespoon or two.  As the oil and lime juice emulsifies you can add oil a little more quickly as you whisk it in.  Oil should be almost 3 times the amount of lime juice
2. Season with the salt and pepper.  Taste and add more honey if needed.

This is a basic vinaigrette.  You can use the same recipe, but switch up the acid and the flavoring to make different tastes.
