GARLIC ROASTED POTATOES
This is an easy recipe that tastes so good, my husband declared that it couldn’t possibly be good for him. I originally found the recipe on the Food Network (https://www.foodnetwork.com/recipes/ina-garten/garlic-roasted-potatoes-recipe-1913067)
Ingredients
3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves) — add more to taste (I add LOTS)
2 tablespoons minced fresh parsley (I usually don’t have this, so I omit)
Directions
Preheat the oven to 400 degrees F.
Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning. (I flip maybe once. I’m lazy like that.)
Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

I’m so glad SOUL SEARCH appeals to you! The dog on the cover is actually the inspiration for the Zackie character. She is a search dog who served as a trailing K9 on numerous searches and is now training to certify as a cadaver dog. Just like the Zackie character, she’s kind of sassy.
