BANANA BOURBON BREAD PUDDING
[Serves 8]
1 loaf French bread cut into 1-in. pieces
2 large eggs
½ cup packed dark brown sugar
1 T. vanilla
¼ tsp. ground nutmeg
1 qt. milk
¼ cup bourbon
½ cup golden raisins
2 large firm-ripe bananas
Confectioner’s sugar
Nonfat frozen yogurt (optional)
½ cup bottled caramel topping
Preheat oven to 375 degrees. On baking dish, dry out bread in oven 10 minutes. In large bowl, whisk eggs, brown sugar, vanilla, nutmeg, milk and bourbon. Add bread and raisins. Let stand 45 minutes. Preheat oven to 350 degrees. Slice bananas ½ inch thick; add to bread mixture. Pour into 2½ quart baking dish. Cover with aluminum foil. Bake 45 minutes; remove foil. Bake 20 minutes, until set. Cool 10 minutes. Dust with sugar. Serve with frozen yogurt and topping.
