Karen’s Killer Fixin’s #Cookies #Bars: NO-BAKE “GRANOLA” BARS from Karen’s Kitchen

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is NO-BAKE “GRANOLA” BARS!

I’ve wrapped “granola” in quotation marks because there are those who wouldn’t call this a true granola. Whatever! LOL It’s easy to make and has the earmarks of granola-like ingredients, just in bar form for those “dash out the door” breakfasts. Yeah, it’s kind of a naughty breakfast with all that corn syrup, but we’re dashing out the door, right? If you had time, you’d be making egg whites on dry rye toast points and…yeah, not likely. The nice thing is that the kids will like these, too. In their lunch boxes. For afternoon snacks. Just for giggles.

NO-BAKE “GRANOLA” BARS
[4 –1/2 dozen]

2-1/2 cups crispy rice cereal
2 cups uncooked quick-cooking oats
1/2 cups raisins
1/2 cup chopped nuts
1/2 cup firmly packed brown sugar
1/2 cup light corn syrup
1/2 cup peanut butter
1 tsp. vanilla
1/2 cup milk chocolate morsels *

Combine first four ingredients in large bowl and set aside. Bring brown sugar and syrup to a boil in small pan over med-high heat, stirring constantly. Remove from heat. Stir in peanut butter and vanilla. Pour peanut butter mixture over cereal mixture. Stir until coated. Let stand 10 minutes. Stir in chocolate morsels. Press mixture into 13” x 9” pan. Cool in pan on wire rack. Cut into bars.

*For a change of pace, change up the milk chocolate morsels for caramel or semi-sweet or peanut-butter or a mixture of your favorite!

  1. Sounds yummy. I would substitute maple syrup for the corn syrup and add a c in front of raisins, but I suck at following recipes. I can see the kiddos loving this one.

    1. That’s okay. I often don’t follow recipes either. They’re a great benchmark though. I’m not sure if they’ll stick together as well with maple syrup as opposed to corn syrup, but you won’t know until you try.
