Karen’s Killer Fixin’s #Crockpot #Dip: SPINACH & ARTICHOKE DIP from Karen’s Kitchen

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is SPINACH & ARTICHOKE DIP!

I grew up not knowing what artichokes were, let alone tasted one.. At least, they were never on our menu growing up. Too expensive, even if you could find them. They can still be pricey if they’re fresh and whole. But, I digress. After I discovered artichokes, they have featured in a lot of my recipes. Once they started canning them, it became easier to enjoy them. I love this recipe because I can make something special on game days or for potlucks quite easily. It just needs to cook for a couple of hours while I do other things

SPINACH & ARTICHOKE DIP
[Makes 4 cups]

NOTE: Works best in small (maximum 3-1/2 quart) slow cooker.

1 cup shredded mozzarella
8 oz. pkg. cream cheese, cubed
¼ cup freshly grated Parmesan Cheese
1 clove garlic, minced
¼ tsp. pepper
1 can (14 oz.) artichokes, drained, chopped
1 (10 oz.) pkg. spinach leaves, thawed

In slow cooker, combine cheese, cream cheese, Parmesan, garlic, pepper, artichokes and spinach.  Cover and cook on high for 2 hours, until hot and bubbly.  Stir well.

Serve with toast points or specialty crackers.

    1. It’s a crowd pleaser at parties. Never can get any to take home, much to my husband’s disappointment. Means we just have to make it once in a while, just for us. 🙂

  1. I love how easy this is! My local grocery store has heat and eat bacon artichoke spinach dip that is very tasty!

    1. I quite often throw in real bacon bits (package) I have tucked in the freezer for emergency tastiness. 🙂 I hope you find this as tasty (or tastier!) as the kind you like from the store.
