It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is BREAD & BUTTER PUDDING with SPICY SAUCE!
I love bread pudding, a good one at least. It has to to be moist and flavorful and smothered in a sauce that makes you go back for a second helping. Make it easy to put together, and I’m sold. Honestly, I haven’t made this one in FOREVER, but that will have to change now that I’ve dug this recipe out of my binder to share. It’s just such a delicious treat. I’ll have to make it when there are oodles of people to help me eat it so I can behave on my diet and still get my taste without feeling too guilty. Even making a half portion is too much these days with just me spooning it up. LOL

BREAD & BUTTER PUDDING with SPICY SAUCE
2 T. butter
1 tsp. vanilla
2 eggs
1½ cups day-old French bread (cut into 1-inch cubes)
1 cup milk
1/3 cup sugar
Warmed SPICY SAUCE
¼ cup raisins
In 1 qt. casserole dish, melt butter 30-40 seconds in microwave. Add eggs and beat well. Blend in milk, sugar, raisins, vanilla and 1/8 tsp. salt. Stir in bread cubes. Let stand 5 minutes. Stir gently. Microwave, uncovered, until set, about 5½ to 6 minutes, stirring after 3 minutes. Serve warm with SPICY SAUCE (below).
SPICY SAUCE:
[Makes 1 cup]
½ cup sugar
½ tsp. ground nutmeg
1 T. cornstarch
2 T. butter
½ tsp. cinnamon
½ tsp. vanilla
In 4 cup glass measure, mix sugar, cornstarch, and spices. Stir in ¾ cup water. Microwave, uncovered until thickened and bubbly, about 3 minutes, stirring after each minute. Cook 1-minute more. Stir in butter and vanilla. Serve warm over BREAD & BUTTER PUDDING.

Yum, this reminds me of my mom’s bread pudding.
I have another, traditional version of this bread pudding. I just like this one for a “quick and dirty” version when I’m in a hurry and want something for after dinner or when I need a last minute dessert for a party.
