It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is BARLEY PILAF from KAREN’S KITCHEN!!
If you’re looking for something different to go with that main dish than the usual rice, potato, or noodle, try pearl barley! This makes for a nice change of pace for your family meal and can make a special dinner look like you’ve gone that extra mile. And, it’s so tasty, too!

BARLEY PILAF
[From Karen’s Kitchen]
[8 Servings]
1-3/4 cups pearl barley
8 T. butter
2 onions, chopped
1/2 lb. sliced mushrooms
2 cups strong beef stock
salt
pepper
1/2 cup toasted macadamia nuts
1/2 cup fresh parsley
Preheat oven to 350 degrees. Saute barley in 4 T. butter until golden. Spoon into large buttered casserole dish.
In 4 T. butter, saute onions and mushrooms. Stir into barley.
Pour stock over mixture in casserole dish and cover tightly. Bake 30 minutes.
Uncover and bake 20 minutes more, stirring occasionally. Add more liquid if it becomes too dry. Season to taste with salt and pepper.
Stir in nuts and parsley just before serving.
