Karen’s Killer Fixin’s: Karen’s #Pasta #Salad, Recipe from Karen’s Kitchen

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is KAREN’S PASTA SALAD!

It’s been so hot all across the country and just thinking about cooking and heating up the house is NOT appealing. This salad is quick, easy, and so versatile. It can be used as a side dish at a BBQ or, with just a few added ingredients, you can make it a full meal, limited only by your imagination!

KAREN’S PASTA SALAD

Cooked Pasta

1 cucumber, chopped

1 green pepper, chopped

½ bunch green onions, chopped

1/2 to 1 can black olives, sliced

mushrooms (1 minute sauté) 

2 tomatoes, diced

1 bottle Italian dressing 

½ bottle Salad Supreme Spice

Parmesan to taste 

Toss it all together and let “steep” a bit in the refrigerator. Or not. Like I said, easy peasy.

** The more it steeps, the stronger the flavor. I’d recommend starting with half the salad dressing amounts to start. Add the rest, if you want the full flavor.

NOTE: To make this a full meal, add cooked chicken. Sauté in olive oil until just done. The salad dressing will be strong enough, so don’t add any more spices. Although, leftover rotisserie chicken can work, too. Or you can toss in some pepperoni and ham chunks. Get creative!
