It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is MINUTEMEN MACAROONS!
I’ve always loved Mounds (and Almond Joy) candy bars so it’s only fitting I also have a wonderful coconut cookie recipe. Making these cookies is a breeze and the end result is scrumptious! Add chocolate and/or almonds and you can recreate the candy bar flavors. A three-in-one cookie recipe!

MINUTEMEN MACAROONS
[Makes 30]
2-2/3 cups (about) flaked coconut
2/3 cups sweetened condensed milk
1 tsp. vanilla
Combine coconut, milk and vanilla. Mix well. Drop from teaspoon, 1 inch apart, onto well-greased baking sheet. Bake at 350* for 8-10 minutes or until lightly browned. Remove at once from sheets.
NOTE: Add 2 cups semi-sweet chocolate chips to make Mounds Cookies. Add 2/3 cup chopped lightly salted almonds to make Almond Joy Cookies.
