It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is SHRIMP GARLIC PARMESAN PASTA!
I love shrimp AND garlic AND pasta. Mixing them in a meal filled with parmesan cheese? Yum! Comfort food doesn’t get any better than that! I love that there aren’t a bunch of pans to clean up after you’re done serving to your family. The family will be impressed by the food you’ve prepared for them. Win-Win!

ONE-POT SHRIMP GARLIC PARMESAN PASTA
[Serves 4]
1 pound peeled and deveined shrimp (More if desired)
3 T. butter
3-4 T. minced garlic
2 cups chicken broth (make with chicken bouillon, preferred)
1 cup milk (plus, if needed)
8 oz. Spaghetti or fettuccine
Mrs. Dash (to taste)
¼ cup Parmesan cheese
Fresh parsley (optional, to garnish)
Melt butter in a large skillet over medium heat. Add garlic and cook until fragrant, stirring throughout to prevent scorching, about 1-2 minutes
Stir in broth, milk, and spaghetti/fettuccine (broken in half). Season with Mrs. Dash.
Bring to a boil. Reduce the heat and simmer until pasta is cooked, 18-20 minutes. (If you don’t do al dente, cook longer if necessary. Might mean adding a small amount of water.) Stir occasionally to keep from scorching. Add shrimp to cook to pinkish color. Stir in parmesan. If mixture is too thick, add more milk as needed to desired consistency.
Serve immediately. Garnish with parsley, if desired.
