Karen’s Killer Fixin’s: Peanut Butter Chews #recipe #cookies

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is PEANUT BUTTER CHEWS!

This is an old recipe and has fallen out of favor because of it’s made with white corn syrup. But for a once-in-a-blue-moon treat, it’s quite yummy. Kind of a variation on Krispy Treats.

PEANUT BUTTER CHEWS

1-1/2 cups sugar
1-1/2 cup white corn syrup
2-1/2 cups peanut butter
8 cups corn flakes 

Stir together sugar and syrup and cook until it comes to a boil.  Remove from heat.  Add peanut butter and beat until smooth.  Add dry cereal and press into large cookie sheet.

  1. This is very similar to a recipe I learned in junior high. Well, same ingredients, but fewer of each. I used to make them for my dad to take to work. Oh, and I heated the peanut butter in the pan with the corn syrup and sugar. Really good. But not too much sugar for my diet now.

    1. I haven’t tried to replace the sugar with Stevia but I really should try it. If you can cut at least that much sugar from the recipe, it’s an improvement. I’m watching my sugars, too. 🙂

  2. Didn’t know corn syrup fell out of favor but can see the appeal of this recipe.
    I’d do the same as Samantha , melt them together. 😉

    1. Yeah, corn syrup is another one of those sugars that has gained a bad rap. I think anything in moderation is the key. 🙂 They’re just a fun treat once in awhile.
