It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is SAUTÉ OF CHICKEN & BROCCOLI, ITALIAN STYLE!

I found this recipe on the Food Network and it’s really delicious. Who doesn’t love pasta? I also like that there are some fresh and healthy ingredients to make it good for us.

SAUTÉ OF CHICKEN & BROCCOLI, ITALIAN STYLE
[Food Network recipe-Michele Urvater]

[Serves 4]

2 cups broccoli florets
8 ounces penne
3 tablespoons olive oil
1/4 cup minced onion
12 ounces skinless boneless chicken breast, cut into small dices
2 tablespoons white wine
1/2 teaspoon oregano
1 to 1 1/2 cups tomato sauce
2 tablespoons minced fresh parsley
Salt and freshly ground pepper

Bring salted water to a boil. Parboil the broccoli for a minute and remove. Add the penne and cook for 8 to 10 minutes or until al dente.

In a large skillet heat the olive oil. When hot, add the onion and sauté.

In a large skillet heat the olive oil. When hot, add the onion and sauté for 3 to 4 minutes. Add the chicken and sauté, stirring continuously until no longer pink. Add the garlic and sauté a few moments, then add the white wine, oregano and tomato sauce. Add the parboiled broccoli and simmer just to reheat. Season to taste with salt and pepper and garnish with Italian parsley. Drain penne and transfer to a bowl. Top with chicken and broccoli, sauté and serve.

Note: Although the recipe calls for al dente, I’m not overly fond of chewy veggies or pasta. If you’re the same, be sure to cook both a little longer to your preference.
