Karen’s Killer Fixin’s #Rice: WILD RICE WITH PINE NUTS from Karen’s Kitchen

 

It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is WILD RICE WITH PINE NUTS!!

We love wild rice, although we don’t often splurge on it. I don’t know why. It’s so satisfying. This is an especially good addition to a meal with the pine nuts. Another treat we don’t often have. The combination is so yummy! Now that I’ve dug this recipe out of the archives, I’m going to have to pick up the ingredients so I can make it for the hubby and I one night. My mouth is watering so much right now. Soon!

WILD RICE WITH PINE NUTS
[From Karen’s Kitchen]

3 slices bacon, cut into pieces
1/2 cup chopped onion
1 celery stalk, cubed
1 garlic clove
1 cup wild rice
3 cups water
salt to taste
1/2 cup pine nuts
4 T. butter

Saute bacon. Add onion, celery, and garlic. Cook until soft. Add rice and water. Season with salt (by taste preference). Cover, simmer 45 minutes. Uncover and set aside to cool and dry. Discard garlic*.

Just before serving, saute pine nuts in butter. Add to rice. Toss to mix well. Cook until heated through.

*My family loves garlic. I often just chop the garlic fine and toss it back into the rice when I toss in the pine nuts. An added burst of flavor.
