It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is PAT’S FRUIT SALAD!!
Pat is a friend I had when I lived in northeastern Colorado. I was sad when she moved away because we spent a lot of time at each other’s house, sometimes visiting, sometimes cooking, and sometimes hiding in her basement during tornado warnings. Yikes! Anyway, she was a really great cook and often made foods that were good for us that were actually tasty. We often shared recipes. I wasn’t much for salads of any kind before we met. Anyway, she made this fruit salad for one of our family dinners one night and I was sold. It was quick and easy to make, refreshing, and so tasty. In all of this heat, a cool refreshing salad is a win-win! I think you’ll agree.

PAT’S FRUIT SALAD
Fruit Salad Ingredients:
13 oz. pineapple chunks
11 oz. mandarin oranges (sliced)
8 oz. grapes
1-2 sliced bananas
1 avocado (chunks)
2 kiwi fruit (chunks)
Syrup Ingredients:
1/2 cup sugar
1 heaping T. flour
1 egg yolk
3/4 cup. pineapple juice
1/4 cup lemon juice
After bringing syrup to a full boil so it thickens a bit, turn off and let cool before tossing with the fruit. Serve. Can refrigerate until ready to serve if you’re making it ahead of time.
