It’s time for Karen’s Killer Fixin’s!

Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is CRAB PUFFS SUPREME from KAREN’S KITCHEN!!

When I attend parties or BBQs, I enjoy bringing a variety of things. One, because I love to cook if I have the time and energy. Two, because I enjoy sharing food with my friends and family, they might not generally get to eat. And three…I don’t like to bring home half-full BYO platters and crockpots because there are already two crockpots of baked beans, and mine makes three. There are only so many baked beans twenty-plus people can eat in one sitting. Just sayin’! One of the things I love about this recipe is that it can be made ahead of time and frozen. That makes four reasons I do the things I do for parties!

CRAB PUFFS SUPREME
[From Karen’s Kitchen]
[Makes 4 Dozen]

1 (6-1/2 oz.) can crabmeat, drained and flaked
1/2 cup grated cheddar cheese*
1 tsp. Worcestershire sauce
3 green onions, chopped
1 tsp. dry mustard
1 cup water
1/2 cup butter
1/4 tsp. salt
1 cup flour
4 eggs

Preheat oven to 400 degrees. Combine the first five ingredients and mix well.

Combine water, butter, and salt in a saucepan. Bring to a boil.

Remove from heat and immediately add flour, beating until the mixture leaves the sides of the pan and forms a ball.

Add eggs, one at a time, beating thoroughly after each addition. Thoroughly blend into the crab mixture.

Drop a small teaspoon onto an ungreased baking sheet.** Bake 15 minutes at 400 degrees. Reduce heat to 350 degrees, and bake 10 minutes more.

*For a change of pace, you can use other cheese variations

**Unbaked puffs can be frozen on a baking sheet and transferred to plastic bags. Reheat without thawing at 375 degrees until crisp.
