It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is COCONUT SHRIMP BALLS !
This recipe is wonderful made just for your family, kind of a side dish or even just as a snack. But these are also wonderful for parties and BBYO BBQs. They’re relatively easy to make and such a nice surprise. No one else will be bringing this to the party! Since you do want to serve them immediately, and hot, these are an easy treat to whip up at your own party. Your guests will be impressed. 🙂

COCONUT SHRIMP BALLS
(Makes 30 balls)
1 lb. uncooked shrimp, shelled and deveined
2 eggs
¼ cup grated fresh coconut
1 T. cornstarch
1 tsp. ground coriander
½ tsp. salt
1 cup peanut oil or corn oil
Coarsely grind or chop shrimp. Transfer to medium bowl. Blend in eggs. Add coconut, cornstarch, coriander, and salt. Mix well. Refrigerate mixture 30 minutes. Heat oil in wok or heavy large skillet over med-high heat. Add shrimp mixture to oil by heaping teaspoons (do not crowd) and cook until lightly browned, turning occasionally about 3 minutes. Remove with slotted spoon and drain on paper towel. Transfer balls to platter and serve immediately.

I love coconut shrimp and this has a similar taste without all of the coconut falling off. Blends perfectly.

My husband loves coconut shrimp. These would be a nice alternative. Will have to try them.
