
It’s time for Karen’s Killer Fixin’s!
Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is FRENCH ONION SOUP from KAREN’S KITCHEN!!
As we tiptoe into the fall weather soup season–yeah, it’s a thang–I thought you might appreciate this recipe. Something to put on the back burner, so to speak. Snort. Although it is good anytime. It’s so easy to make, too, which is the deciding factor for me these days. This soup won’t heat up your kitchen!

FRENCH ONION SOUP
[Makes 6 Servings]
[From Karen’s Kitchen]
1/3 cup bacon drippings or butter
5 medium sliced onions
2 T. flour
7 cups beef stock
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup sherry*
6 slices French bread
6 thin slices Swiss cheese
1/4 cup Parmesan cheese
Heat the bacon drippings. Add the onion and sauté until tender. Stir in the flour and cook until the flour browns. Gradually add the beef stock, stirring to keep the flour from clumping. Add sherry. Taste before seasoning with salt and pepper.
In six heatproof bowls, place a slice of toast in the bottom. Cover each with a slice of Swiss cheese. Pour the soup over the top. Sprinkle each with Parmesan cheese. Place under a broiler just long enough to melt the cheese.
*Sherry is optional if you don’t have any or can’t drink alcohol. It just adds a nice bouquet.
