It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is TURTLE BROWNIES!
Who doesn’t love a pan full of yummy, gooey brownies? I love turtle candies, too, and this recipe gives you a taste of both. This is a wonderful panful of flavor that is always welcome at a Halloween party.

TURTLE BROWNIES
Ingredients:
4 oz. Semisweet chocolate (chopped)
1 oz. Unsweetened chocolate (chopped)
1 stick unsalted butter (cut into pieces)
1 cup packed brown sugar
1 tsp. vanilla
2 eggs
3/4 cup & 2 T. flour
1/4 tsp. baking powder
1/2 tsp. salt
Caramel:
3/4 cup sugar, 1/3 cup light Karo syrup, 3 T. water, 1/3 cup cream, 1 tsp. vanilla, 1-1/2 cup pecans
Preheat oven to 350*. Melt butter and chocolate over low heat. Cool to lukewarm and add brown sugar and vanilla. Add eggs 1 at a time, beating well with wooden spoon. Sift together dry ingredients, add to liquid, mixing until just blended. Bake 30-35 minutes in a 9” square pan. Cool.
Caramel: Bring sugar, Karo, water, and pinch of salt to boil. Stir until sugar is dissolved. Cook without stirring until golden caramel. Remove from heat. Carefully add cream and vanilla. Stir in pecans. Pour over cooled brownies. Drizzle with melted chocolate.

I love Turtles candy! I love brownies! I know I’d LIVE these!!! My diabetes wouldn’t tho,☹️. It would be worth going off the diet.😋. Since it’s just me and the cat, I’d eat the whole pan, quickly! Best pass.😢
You CAN make half a batch, Judy, AND you can freeze them into individual servings. 🙂
