It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is RED POTATOES WITH CHIVES!
I’m always looking for side dishes that are a little different or outside the normal fare. Hey, everyone can get bored with simple mashed or fried potatoes! LOL I’m not usually a fan of recipes that include lemon juice–nope, not a fan–but this is the one exception. With the other ingredients, it’s a refreshing flavor change. Goes great with any meat choice….or no meat at all.

RED POTATOES WITH CHIVES
3 T. butter
¾ tsp. salt
¼ tsp. pepper
1 tsp. garlic (or more, to taste)
1 T. lemon juice
1 tsp. grated lemon zest
2 lbs. red potatoes, cut into 1-inch pieces
2 T. minced fresh chives or green part of scallion
In nonstick skillet, melt butter over low heat. Add potatoes, salt and pepper, and garlic; cover and cook, stirring occasionally, until tender, about 30 minutes. Remove from heat. Stir in chives, lemon juice and zest and serve.
