It’s time for Karen’s Killer Fixin’s!

Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is O’BRIEN POTATOES from KAREN’S KITCHEN!!

I grew up in meat and potatoes country, so I have several really good potato recipes to share. Today’s version is easy to make, immensely satisfying as a side dish, and delicious! It could even be served as a main dish!

I hope you enjoy today’s Killer Fixin’s. Happy eating!

O’BRIEN POTATOES
[Makes 4 Servings]
[From Karen’s Kitchen]

2 T. margarine or butter
1 medium yellow onion, thinly sliced
4 large potatoes, peeled, cooked and diced
1-1/2 tsp. thyme
1/4 tsp. pepper
6-12 oz. diced, baked ham
1/2 cup chopped sweet peppers*
1/3 cup evaporated milk or half-and-half
1/4 cup parsley

In a skillet, melt 1 T. of butter over a moderately high heat. Add onions and sauté for 5 minutes. Remove onion to a small bowl.

Add 1 T. butter to the skillet and stir in potatoes, thyme, and black pepper. Cook, without stirring, for 5 minutes or until beginning to brown. Stir and continue cooking until browned throughout.

Return onion to the skillet. Add ham and sweet pepper and cook for 5 minutes longer or until vegetables are tender.

Stir in the milk and cook 1 minute more. Then sprinkle with parsley.

*You can use green bell peppers, but I think red, orange, or yellow have a sweeter flavor. I’m really not a fan of green bell peppers. Too bitter for my taste.

Happy Cooking!
