
It’s time for Karen’s Killer Fixin’s!
Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is QUICK SPINACH & POTATO MEDLEY from KAREN’S KITCHEN!!
The one thing I love about this side dish is that it’s quick and easy, and if you’re smart you’ve already got the basics for this one waiting in your pantry for those last minute, do-or-die what-the-devil-do-I-make-tonight veggie dishes. The less stress at dinnertime, the better, right? Stock up on a few cans and you’ve always got a ready answer at your fingertips.

QUICK SPINACH & POTATO MEDLEY
[Makes 4-6 Servings]
[From Karen’s Kitchen]
1 can (15 oz.) spinach
1 onion, cut into chunks
1 can whole new potatoes, drained and quartered
1/2 tsp. marjoram
1/4 tsp. thyme
3 slices bacon, crumbled*
Drain the spinach well, pressing out the excess liquid.
Cook bacon in a skillet. Remove the bacon bits to a paper towel to drain, and set aside.
Sauté the onion and potatoes in bacon drippings. Stir in marjoram, thyme, and spinach. Heat through. Crumble bacon and sprinkle over the top before serving.
*The recipe calls for 3 slices. I say it’s just a suggestion. Wink. This also works with chunks of ham.
**I highly recommend doubling the recipe. It tastes that good!
