It’s time for Karen’s Killer Fixin’s!

Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. Every Friday, I share a recipe that I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author’s favorite. It could be a cookie or a baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is SUMMER SQUASH MEDLEY from KAREN’S KITCHEN!!

I thought this recipe was appropriate since we’re heading into the famous “zucchini season” of the summer. Anyone who has planted zucchini or any other squash generally has enough for their family and the entire neighborhood, so the chances are good you’ll end up with a pile of squash to eat up. And there are never enough recipes for squash, right?

SUMMER SQUASH MEDLEY
[From Karen’s Kitchen]
[[Serves 6]]

2 T. butter
cooking spray
1/2 cup julienne-cut red bell peppers
1/4 tsp. salt
1-2/3 cups sliced yellow squash (about 2 medium)
1/4 tsp. garlic powder
1/4 tsp. dried basil
1-2/3 cup sliced zucchini (about 2 medium)
1/4 tsp. dried oregano

Melt butter in a large non-stick skillet coated with cooking spray. Add squash, zucchini, and bell pepper. Sauté over medium-high heat for 5 minutes or until crisp-tender. Remove from heat. Stir in remaining ingredients.
