Bob’s Breakfast Shrimp Gravy with a Robin (pescatarian) Twist
NOTE FROM ROBIN: This is my daddy’s version of the Charleston Junior League’s recipe found in Charleston Receipts but sans the bacon. Nowadays we know to acknowledge that this first recipe is most likely a Gullah-Geechee invention set down for prosperity by the woman who submitted the recipe. This is MUCH better than anything you’ll find in a restaurant, it’s simple and savory and will knock your socks off. Serve for breakfast, brunch, or supper.
Bob’s Breakfast Shrimp Gravy with a Robin (pescatarian) Twist
Ingredients:
Grapeseed or Olive Oil
Liquid Smoke
1 sweet onion chopped fine
1 small green pepper chopped very fine
1 cup Bella mushrooms thinly sliced
2 tablespoons wheat flour
salt and pepper
1 cup almond milk
½ pound raw shrimp (8-10 ct)
grits
Instructions:
Popcorn the shrimp by cooking it in a small bit of water (enough to layer the bottom of the pot) in a pot with the lid on. It’s called popcorning because you shake the pot to cook the shrimp evenly.
After the shrimp has cooled, chop each shrimp into three pieces. Set aside.
Sauté the onion, green pepper, and mushrooms in the oil in a large pan.
Add a couple of drops of Liquid Smoke.
Move vegetables to a bowl.
Brown the flour in the sauté pan. Add salt and black pepper (the more pepper the better!).
Stir in almond milk and scrape the pan to make your gravy.
If too thick add some water or more almond milk.
Add shrimp and vegetables.
Serve over grits.
Happy Reading!
