Welcome to my Friday bonus feature called Karen’s Killer Fixin’s **Author Special**!! Today, in lieu of one of my own recipes, I’m going to introduce you to a new author who will share one of her favorite recipes. Not only will you and I occasionally learn how to make something new and delicious, but we’ll get a chance to check out some wonderful authors. Introducing author, DEBBIE MANBER KUPFER, and her favorite recipe for LATKES!
Tales from Umbrah

It’s the first night of Chanukah and Esmeralda and her friends have a very important task to complete before sundown.
They need to make enough yummy latkes for all the flower fairies in the garden. There’s no time to waste.
Can they succeed before it’s time to light the menorah?
Excerpt
Esmeralda Grunch woke up from her bed deep inside the hibernating tulip.
Tulip was snoring again. The flower sprite nudged their petals hoping to coax them back into silent slumber, but with no luck. Reluctantly, Esmeralda reached up and parted the crimson petals.
A harsh burst of cold air slammed the sprite, and for a moment she thought about going back to sleep, but that wouldn’t do. Tonight was the first night of Chanukah, and she had an important task to complete before sundown.
She eased herself out of the sleeping tulip and shivered as a huge snowflake landed on her nose. Ugh, she hated snow!

Potato Latkes are yummy, crispy pancakes eaten on Chanukah. Just like Esmeralda and her friends, you can make them too with the easy recipe below.
But please make sure a grown-up is helping and stay safe around the hot stove.
You will need:
One medium sliced potato per person
One heaped tablespoon of flour or matzo meal per potato
One egg per two potatoes
One small onion, chopped (optional)
Salt and pepper
Oil for frying (if using canola — but any cooking oil will do)
Applesauce and/or sour cream for topping (optional)
- Grate the potatoes either manually like Esmeralda or her friends (be careful with your fingers) or in a food processor.
- Add the flour, eggs, chopped onions (if you’re using them) and salt and pepper, and mix well.
- Dust your hands with flour and form the mix into flat pancakes.
- Fry in oil until golen brown on both sides. Make sure a grown up is doing the frying bit! And stay we back from the hot oil.
- Enjoy with applesauce or sour cream or just on their own.
Happy Chanukah!

Good morning, Debbie, and welcome back to Karen’s Killer Fixin’s. Your children’s book sounds like a fun read. What child doesn’t love sprites? Your recipe sounds good, too. I love Latkes. Can’t wait to try them both! Thanks for sharing them with us today!
Thank you Karen for hosting me and I hope your readers enjoy both the recipe and the book!
Huge fan of latkes…I use this recipe
I know many people with young children who’d love this book.
Thanks, Debbie and Karen.
Thank you and Happy Last Day of Chanukah!
This sounds like the perfect read for my 4 yo granddaughter. Her mom & I have had her helping in the kitchen since she was 2-ish and she loves to help. Just like her mom, aunt & uncles. We’re having our latke family dinner tonight & our recipe is the same. Thanks so much for sharing.
So much fun to cook together when they’re small!
The book sounds like a special story, and the latkes yummy!
