A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is ZANY BEEF & ZUCCHINI SKILLET!
If you planted zucchini this year, it’s that time when you can harvest more zucchini than you know how to prepare. Here’s a wonderful, quick way to serve up a satisfying family meal using some of that zucchini. Even if you didn’t plant a garden this year, this healthy vegetable is on sale now!

ZANY BEEF & ZUCCHINI SKILLET
[Serves 6-8
1 lb. ground beef
1 cup chopped onion
¾ cup green pepper, chopped
1 clove garlic, minced
1 ½ tsp. salt
¼ tsp. pepper
1 tsp. chili powder
5 cups zucchini, sliced
2-3 large tomatoes, chopped
1 ¼ cup corn
¼ cup fresh parsley, chopped
Sauté beef, onion, green pepper and garlic in 12” skillet until well browned. Add remaining ingredients. Cover, simmer 10-15 minutes or until vegetables are tender. Tastes great with warm biscuits or muffins.
(Options: Substitute chopped cooked chicken for beef. Or change the seasonings to Italian herbs and top with sliced mozzarella cheese. Serve when cheese is melted.)
