Karen’s Killer Fixin’s: Marbled Cheesecake Bars

Karen’s Killer Fixin’s: Bacon-Wrapped Chicken

CookingIt’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is BACON-WRAPPED CHICKEN!

I love chicken because it’s so versatile. One or two recipe changes and it tastes completely different. Add bacon–mmmmm, BACON–where was I? Oh, yeah! A new chicken recipe for you. It sounds like this is a bit of work to put together but it really isn’t. Even if it was, it would be sooooo worth the effort. These flavors mesh so beautifully. The family will love it!

Karen’s Killer Fixin’s: Pineapple Cheese Salad

A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is PINEAPPLE CHEESE SALAD!

My mom has been making this recipe most of my life for special holidays and parties, but it’s a great change on the traditional salad anytime. Placing squares of Pineapple Cheese Salad on a bed of lettuce looks festive and the flavors are pure dessert. It’s a favorite in my house and easy to make, even though it takes a bit of planning to allow for the “setting” time. Mmmmm! I think I may need to make this soon. 🙂

Karen’s Killer Fixin’s: Broiled Chuck Steak with Herbs

It’s been awhile since I’ve had the opportunity to share one of my own recipes on Killer Fixin’s and I thought it would be nice to share a quick and easy chuck steak recipe. You can do this one on the barbecue grill but be careful to watch for flare ups with the butter and oil mixtures. It is easier to control the cooking process in the oven. Serve with a crisp salad and some hot bread and you’ve got a great fall meal.

If you’re looking for something different to make for the family that they’ll love, this is the recipe for you. They’re similar to beef pasties but “lighter” somehow. That doesn’t mean less filling though. Fix a salad with these, and no one will walk away hungry. I promise! I admit this one takes a bit of work but it’s so worth it. Grab an eager assistant and it will go so much faster. I’ve been known to make a double batch so there’s enough left over for lunches. It’s a “grab and go” meal that’s good hot or cold!

A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is CREAMED DRIED BEEF ON TOAST OR WAFFLES aka S.O.S.!

How many of us grew up eating creamed dried beef or S.O.S. (Stuff, okay, “That Other Word” On a Shingle) or Creamed Chipped Beef as it was also called? It was a quick and satisfying meal and inexpensive. It was also one of the few times we could justify eating waffles for dinner. No waffles? Toast works, too.

I recently had a conversation on Facebook with Sam, a friend and reader, about a recipe I shared that essentially called for Peanut Butter Cups. I mentioned I had a homemade recipe to make my own and she pointed out that I’ve never shared it here. Mea culpa! She also shared her recipe for Reese’s Squares with me as an alternative to buying peanut butter cups. We decided to share them both. Easy to make Candy Heaven!

A lot of people have recipes for Snickerdoodle Cookies but this is my version. One of the reasons I love it is because it makes so many wonderful cookies. If you need cookies for a school bake sale, this is the recipe for you! No, these won’t be those, “I forgot to tell you, Mom, but I need a million cookies tomorrow” cookies. But they’re so yummy and worth the effort.

Today is Double Recipe Day! Can’t share a cake recipe without including the special frosting that makes the cake even more delicious. If you’re a Devil’s Food Cake lover, you’ll enjoy this one. The fudge frosting is great on a number of cakes. Try it on banana cupcakes or peanut butter cake to name only two kinds of cake. Wow!
