Karen’s Killer Fixin’s: Marbled Cheesecake Bars

I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe. A cookie or baked item. Candy. Salads. Whatever strikes my eye and fancy…which today is MARBLED CHEESECAKE BARS!

Who doesn’t love cheesecake bars? Easy to make and easy to eat, this is a quick recipe for that special dessert. For parties. For BBQs. For fun anytime.

MARBLED CHEESECAKE BARS
[Makes 24-36]

2 cups vanilla wafer crumbs (@ 60 wafers)
1/3 cup cocoa
½ cup powdered sugar
½ cup butter, melted
3 (8 oz.) pkgs. cream cheese, softened
1 (14 oz.) can sweetened condensed milk
3 eggs
2 tsp. vanilla extract
2 squares (2 oz.) Hershey’s Unsweetened
Baking chocolate, melted

Preheat oven to 300 degrees.  Combine crumbs, cocoa, sugar and butter; press firmly on bottom of 13 x 9-inch baking pan.  In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth.  Add eggs and vanilla; mix well.  Pour half the batter evenly over prepared crust.  Stir melted chocolate into remaining batter; spoon over vanilla batter.  With table knife or metal spatula, gently swirl through batter to marble.  Bake 45-50 minutes or until set.  Cool. Chill.  Cut into bars. Store covered in refrigerator.

  1. I love cheesecake. I love any dessert that has cream cheese in it. Throw in chocolate and I’m in heaven! This sounds soooooo good!

    1. With you there! My husband is not a fan for cheesecake (silly man, more for me!) but all of my kids love it. I’m not much for cake so this is as close as I get to making something cake(y). Sooooo good. Great to bring to BYO parties.
