2 cups flour
8 Tbs (4 oz.) unsalted butter frozen
1 tsp baking powder
½ cup dried currants or raisins
1/4 tsp baking soda
½ cup sour cream
½ tsp salt
1 large egg
1/3 cup sugar
In mixing bowl stir dry ingredients until blended. Use large holes of box grater to grate butter over mixture. Work in with fingers until mixture resembles coarse meal. Add currants.
In small bowl whisk sour cream and egg until smooth.
Using fork stir sour cream mixture into flour until large clumps of dough form.
Use hands to form clumps into ball. The heat of your hands will soften butter enough to overcome initial dryness.
Pat out dough on lightly floured surface and either cut out with biscuit cutter or shape into large circle and cut into wedges. Place on cookie sheet about 1 inch apart and bake in hot oven about 15-17 minutes. (I use parchment paper on cookie sheet and bake at 400 degrees.) Cool for 5 minutes before serving.
QUICK BREAKFAST SCONES
1 cup flour
¼ tsp. salt
6 Tablespoons (3 oz.) butter
½ tsp bicarbonate of soda
1/3 cup sugar
1 cup butter milk
Put flour, sugar, salt in bowl. Rub in butter to make crumbs. Dissolve soda in buttermilk. Stir into bowl to make soft dough. Use spoon to drop onto light greased cookie sheet and bake in hot oven about 17-20 minutes.
