Gwenn sat in her plastic chair in room 128, hunched over the blue booklet that held her answers to the Advanced Psychology 301 final exam. The hairs on the back of her neck lifted with a chill a moment before the classroom door opened.
She pushed her chair back before the professor said her name. Tears streamed down her face as she walked to the front of the room.
“There’s been an accident. Your sister’s being airlifted to St. Luke’s . . .”
The rest of the message disintegrated and her ears filled with white noise. Gwenn dropped her unfinished blue booklet on the professor’s desk and sprinted to her car.
She broke every posted speed limit from Minneapolis to Duluth—daring the police to intervene.
By the time she screeched to a stop against the red curb in front of the emergency room her heart was beyond the breaking point.
For the second time in her life she accosted the nearest nurse and begged to be taken to her sister.
Over eight years had passed since that horrible day when Rachel’s limp body had been pulled from the woeful waters at Clear Lake Bible Camp, and Gwenn had sworn never to let anything like that happened again.
Rue is an award-winning author, who graduated from Pepperdine University in Malibu, California, with a degree in Journalism. Her intimate knowledge of the Midwestern United States, the inordinate amount of time she spent in its churches’ pews and her unique parentage make her an expert on life after religion. Having moved 17 times by the time she graduated from high school Rue has seen more than her share of the Great Plains. She never stayed in one place long enough to make lasting human friends. RACHEL’S SINFULLY SWEET CARAMEL ROLLS
Ingredients:
Rolls
1-1⁄2 cup raisins
1⁄2 cup dark rum
3 loaves frozen sweet or white bread dough, thawed but not double
1⁄3 cup vegetable oil or melted butter
2⁄3 cup packed brown sugar
1-1⁄3 Tbsp cinnamon
2⁄3 tsp nutmeg
Topping:
1 cup powdered sugar
1 cup brown sugar
2⁄3 cup heavy whipping cream
1-1⁄2 tsp vanilla
1-1⁄3 cup coarsely chopped pecans
Non-stick cooking spray for pans
Rachel’s Tips & Tricks:
Using frozen loaves from your grocery store’s freezer section is a time saver. If you’re a baker like me and you have a favorite sweet bread recipe—use it!
If you are allergic to nuts, just leave out the pecans.
If you want to avoid dairy, use vegetable oil instead of butter and substitute thick, rich canned coconut cream for the heavy whipping cream.
Directions:
1. In a small bowl, soak raisins in dark rum. Cover and set aside.
2. Prepare the topping: In a mixing bowl, stir together sugars, whipping cream and vanilla until blended.
3. Spray three 9 x 1-1⁄2-inch round cake pans with non-stick cooking spray. Evenly divide the topping mixture into pans and sprinkle with chopped pecans, if desired. Set pans aside.
4. Prepare the rolls: On a floured surface, roll each loaf into a 12 x 8 x 1⁄4-inch rectangle. Generously brush each sheet of dough with vegetable oil or melted butter.
5. In a small bowl mix together brown sugar, cinnamon and nutmeg. Sprinkle each sheet of dough with mix and top with rum-soaked raisins.
6. Roll up rectangles, jelly-roll style, starting along the 12-inch edge. Pinch dough to seal. Cut into 12 equal slices, roughly 1-inch thick.
7. Place rolls, spiral side down, in prepared cake pans. Cover with wax paper and then a towel; let rise in a warm place for 30 minutes or until doubled in size.
8. Preheat oven to 375°F. Bake uncovered for 25 to 30 minutes. *The last 10 minutes of baking cover with foil to prevent over-browning.
9. Cool in pans for 8 minutes. Invert onto a serving plate. Best warm. Makes 36 rolls.
