It’s time for Karen’s Killer Fixin’s! Over the years, I’ve filled two 4-inch, 3-ring binders with my own creations as well as recipes my family and friends were willing to share with me. I simply love to cook and want to share that love with my readers. So every Friday, I share one recipe I think you and your family might enjoy. It might be a main course recipe from my own kitchen or a guest author favorite. It could be a cookie or baked item. Candy. Salads. Whatever strikes the eye and fancy…which today is CAROLINA CHICKEN from KAREN’S KITCHEN!!
If you’re looking for another way to cook chicken, this might be the recipe you’ll want to try. It’s savory and flavorful. You can serve it with a plate full of vegetables or rice or quinoa, even mashed potatoes! It’s a wonderful change of pace from just plain ol’ chicken dinner.

CAROLINA CHICKEN
[From Karen’s Kitchen]
[Serves 4]
1 skinned chicken, cut in pieces
1/3 cup flour
1 T. oil
1/4 cup sesame seeds
1 T. margarine or butter
1 T. grated orange rind
1/2 tsp. salt
1/2 cup orange juice
1-1/2 cups chicken stock
1/4 tsp. cayenne pepper
1/2 cup milk
Preheat oven to 350 degrees and grease a 2-quart casserole dish. In a bag, shake flour, sesame seed, orange rind, salt and cayenne pepper. Shake chicken pieces well, reserving remaining flour.
In skillet, heat oil over moderate heat. Add chicken and brown. Transfer to casserole dish.
In skillet, melt butter. Whisk in 2 T. of flour mixture and cook until bubbly. Whisk in orange juice and cook 2 minutes longer. Add stock and milk (the mixture will look slightly curdled); bring to a boil. Lower heat and simmer, stirring for 2 minutes.
Pour sauce over chicken, cover, and bake for 45 minutes, then uncovered for 10 minutes more until browned. Serve with rice, vegetables, quinoa, or mashed potatoes.
